The eggplant - Solanum Melongena – originally hails from Myanmar and belongs to the nightshade family. This is the same family to which tomatoes and potatoes, amongst others, belong. Everyone is familiar with the standard purple variant of the eggplant. However, there are also other kinds, such as the Graffiti and the white eggplant. Various breeds are cultivated in the Netherlands, including Beyoncé, Rosheen, Scorpio and Kylie.
Did you know that eggplants are a source of fibre and contain just 20 kcals per 100 grams? In addition, eggplants are high in folic acid, potassium and vitamin B. Thanks to its full and neutral flavour, the eggplant is very versatile. It can be grilled, stir-fried, stewed, fried and barbecued, for example. You can do it all with this vegetable.
